13 - 1 teaspoon grated fresh ginger
14 - 1 small garlic clove, minced

# How to Make:

02 - While noodles cook, blanch edamame in boiling water for 2 to 3 minutes, then drain and set aside.
03 - In a small bowl, whisk together all sesame dressing ingredients until smooth. Add more water if needed to achieve a pourable consistency.
04 - Julienne the cucumber and carrots, and slice the scallions into thin pieces.
05 - In a large bowl, toss cooled soba noodles with half of the sesame dressing until evenly coated.
06 - Divide dressed noodles among four serving bowls. Top each with edamame, cucumber, carrots, and scallions. Drizzle remaining dressing over each bowl.
07 - Garnish with toasted sesame seeds and fresh herbs if desired. Serve immediately.

# Expert Tips:

01 -
  • It comes together in under 30 minutes, which means you can make it on a Tuesday night without drama.
  • The noodles stay satisfying even after a day in the fridge, so leftovers actually taste better.
  • You can swap vegetables without breaking anything, which keeps it interesting across seasons.
02 -
  • Don't skip rinsing the noodles—warm noodles will wilt the vegetables and turn the whole bowl mushy before you finish assembling it.
  • Make the dressing first so you know exactly how much seasoning you have to work with, and taste it before it goes on the noodles.
03 -
  • Buy soba noodles in bulk if you find a brand you like, because you'll make this more often than you expect once people start asking for it.
  • Ginger loses its punch quickly after grating, so do that step right before mixing the dressing if you want maximum brightness.
